Gracious Grits with Pesto & Tomato Gravy
For Cheese Grits, Original Creamy Grits

Ingredients
1 Package of Gracious Grits
1 cup of chopped tomatoes
1 garlic clove, minced
1 small onion finely chopped about ½ cup
¼ cup half & half
1 Tbls. olive oil
2 Tbls. pesto
1 Tbls. grated parmesan cheese
salt & pepper to taste
Directions
Preheat oven to 350 degrees. Lightly oil 8 inch cast iron skillet or 1 ½ qt. casserole dish. Microwave Gracious Grits according to instructions on package. Stir in 2 Tbls. of pesto.
Sauté garlic and onion in olive oil until tender, approx. 3 minutes in a sauté pan. Add chopped tomatoes and sauté for 5 minutes more. Add half & half and S & P and simmer for 3 minutes or until slightly thickened.
Spoon grits into cast iron skillet. Pour the tomato gravy over the grits and top with parmesan cheese. Bake for 8 minutes and serve.
