Gracious Grits Spinach and Tomato Breakfast Bowl
For Original Creamy Grits
- 2 Servings

Ingredients
1 Container of Original Creamy Gracious Grits
4 Eggs
2 TBLS. Butter
1 Cup Cherry Tomatoes, cut in half
3 Cups of Fresh Spinach
2 TBLS. EVOO
½ Cup Parmesan Cheese
Directions
Prepare Gracious Grits according to the directions on the package. Set aside.
Heat 1 TBLS. EVOO in sauté pan over medium high heat. Add tomatoes and cook for 2 to 3 minutes. Set aside. Add 1 TBLS. EVOO and cook spinach for 2 to 3 minutes. Set aside. Add 1 TBLS. butter to pan, cook 2 eggs over-easy. Repeat this step with remaining butter and eggs.
Divide GG into two bowls. Top grits with eggs. Add tomatoes and spinach and sprinkle with parmesan cheese. S & P to taste.
Makes two breakfast bowls.
